Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the macaroni

  1. Wash the macaroni and boil it in boiling broth or stock until tender.

  2. Cut the macaroni into pieces about 1 inch long.

Assemble and bake

  1. Arrange a layer of macaroni at the bottom of a pie dish.

  2. Sprinkle a layer of grated cheese over the macaroni.

  3. Add minced mushrooms, chopped onion, salt, and pepper.

  4. Layer small slices of cold cooked meat on top.

  5. Cover with another layer of macaroni and top with more cheese.

  6. Pour clarified butter over the entire dish.

  7. Bake in a slow oven at 300°F (150°C) for one hour.

Grated cheese
Melts between the layers to bind the pie and add richness and savory flavor.
Minced mushrooms
Adds moisture and savory depth to the filling.
Cold cooked meat
Contributes savory flavor and substance to the layers.
Clarified butter
Adds fat for richness and helps the top brown in the oven.
Onion
Adds aroma and savory flavor to the filling.

The step that matters

Boil the macaroni until fully tender before layering. Pasta that is only partly cooked before baking stays firm, since the oven does not finish softening it well. Cooking it through first gives the layers an even, tender texture.

Swap the onion
