Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and 27,047 recipes mention both. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Sole Au Gratin

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Parboil the shallot.

  3. Chop the mushrooms finely.

  4. Chop the lemon rind finely.

  5. Clean the sole.

  6. Make three cuts on the white skin of the sole.

Assemble and bake

  1. Grease a baking dish.

  2. Sprinkle some bread crumbs on the dish.

  3. Sprinkle a little lemon juice on the dish.

  4. Add the chopped lemon rind, mushrooms, and shallot on top of the dish.

  5. Place the sole in the dish with the cuts facing down.

  6. Sprinkle more mushrooms, lemon, and shallot on top of the fish.

  7. Cover the fish with remaining bread crumbs.

  8. Dot the crumbs with tiny pieces of butter.

  9. Bake in the oven until nicely browned, about 20-30 minutes.

What each ingredient does

Sole
Forms the main body of the dish; its flesh cooks through gently under the crumb topping.
Bread crumbs
Form a crisp, golden topping that browns in the oven and helps hold moisture in.
Mushrooms
Add savoury, earthy flavour and moisture as they release juices into the dish.
Butter
Adds fat that helps the crumb topping brown and adds richness.
Lemon
Adds acidity and bright aroma that cut through the richness of the fish and butter.

The step that matters

Bake until nicely browned. Baking long enough lets the crumb topping brown and the fish cook through, while overbaking can dry out the delicate flesh of the sole.
