Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Weigh the eggs and use the same weight in sugar and half that weight in flour.

  2. In a bowl, mix the sugar with the egg yolks and stir for 10 minutes until thick and smooth.

  3. Whip the egg whites with a pinch of salt until stiff peaks form.

  4. Gently fold the whipped egg whites and flour into the yolk mixture.

  5. Pour the batter into a greased flat baking tin and spread it thinly.

Bake and roll

  1. Bake in a preheated oven at 400°F (200°C) for 8 minutes.

  2. Dust a sheet of paper with sugar, turn the baked roll onto it, and quickly spread jam over the surface.

  3. Roll the cake up tightly while it's still warm to prevent breaking.

Serve

  1. Slice and serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites and yolks trap air and build the sponge's light, structured crumb.
Sugar
Sweetens the sponge and helps stabilise the whipped egg foam.
All-purpose flour
Provides a small amount of structure so the thin sponge holds together when rolled.
Jam
Adds moisture and sweetness inside the roll and helps it stay supple.

The step that matters

Roll the cake while it is still warm. A warm sponge is flexible, so rolling it early prevents cracking. Once cooled, the structure sets and tears more easily when bent.
