What each ingredient does

Mutton
Provides the meat flavour and richness that the broth is built on.
Flour or grits
Lightly thickens the broth so it feels fuller in the mouth.
Turnips
Add a mild sweetness and body to the broth as they cook.

The step that matters

Skimming the scum. Scum is coagulated protein and impurities that rise as the liquid heats. Removing it keeps the broth clear and clean-tasting, so it should be skimmed while the water is still warming and again during the simmer.

Swap the onion

How well each one fits the dish's main ingredients (mutton, flour, turnip, parsley):

  1. Leekfits better
  2. Shallotfits better
  3. Parsnipfits better
  4. Onionthe original

Fit is the average pairing score against mutton, flour, turnip, parsley. Candidates are from the same food group and used in at least 100 recipes.
