Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Mix the flour with a sufficient quantity of sweet fermenting toddy and knead for 20 minutes.

  2. Set aside for at least 1 hour to rise.

Shape and bake

  1. Beat the eggs with the butter and sugar, then work into the dough.

  2. Place the dough in a buttered tin or paper mold.

  3. Bake at 350°F (175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine flour
Forms the structure that holds the cake's crumb together.
Eggs
Add structure and richness, and help bind and lighten the dough.
Butter
Adds fat for a tender texture and rich flavor.
Sugar
Adds sweetness and helps the crust brown in the oven.

The step that matters

Setting the dough to rise. Fermentation produces gas that lifts the dough, so the full rest of at least 1 hour matters. Cutting it short leaves a dense cake that does not rise well in the oven.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
