Ingredients

Directions

The book says “a brisk oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch the almonds and dry them in the sun.

  2. Pound the almonds with the sifted sugar in a mortar until well combined.

  3. Add the egg whites one by one, mixing until a thin paste forms.

Shape and bake

  1. Drop spoonfuls of the mixture onto wafer paper, the size of walnuts.

  2. Sprinkle sliced almonds and sifted sugar on top.

  3. Bake in a slow oven (300°F / 150°C) until light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavour of the macaroon paste.
Sifted sugar
Sweetens the paste and helps it bind with the almonds for a smooth texture.
Egg whites
Add moisture and structure, binding the paste so it holds its shape while baking.

The step that matters

Adding the egg whites. Egg whites must be added gradually so the paste stays thin but cohesive. Adding them too fast can make the mixture too loose or uneven, so the macaroons spread or bake unevenly.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
