Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oranges
Provide the juice that gives the cream its fresh, sharp citrus flavour.
Pounded sugar
Sweetens the orange juice and balances its acidity.
Egg yolks
Thicken the mixture as they set gently with heat, giving a smooth custard body.
Cream
Adds fat and richness, producing a softer, silkier texture.

The step that matters

Stir over low heat without boiling. Egg yolks thicken through gentle heat, but if the mixture boils they can curdle and turn grainy. Low heat and constant stirring let it thicken smoothly.

Swap the orange
