Ingredients

Directions

Make the taffy

  1. Melt the treacle and sugar in a saucepan over medium heat.

  2. Stir gently with a knife until boiling.

  3. After about 10 minutes, drop a little mixture into cold water to test for crispness.

  4. Once done, immediately pour the taffy into a buttered dish.

Cool and release

  1. Let it cool, then turn the dish and tap the bottom to release the taffy.

What each ingredient does

Treacle
Provides the dark color, rich flavor and sticky texture of the taffy.
Sugar
Sweetens the taffy and, as it cooks, sets into a firm, brittle candy.

The step that matters

Testing for crispness. Sugar syrup changes texture as its water boils off and its temperature rises. Testing in cold water shows whether it has reached the firm stage; pulling it off the heat too early leaves the taffy soft and sticky, while cooking too long makes it hard.
