What each ingredient does

Kid's meat
Provides the main protein; slow simmering in liquid makes it tender.
Chennah dhall
Boiling it down thickens the dish and adds body and a earthy, starchy texture.
Almonds
Ground with rice water and cream, they add richness and a smooth, thickened body.
Onions
Frying them until brown builds sweetness and deep savoury flavour as a base.
Cream
Adds fat and richness, giving the sauce a smooth, mellow texture.
Ghee
Adds fat for frying the meat, promoting browning and a rich, nutty aroma.

The step that matters

Fry the meat in the hot ghee until browned. Searing meat in hot fat develops browned, savoury flavour through the Maillard reaction. Meat that is crowded, too cool, or not dried on the surface will steam instead and stay pale and bland.
