What each ingredient does

Capons
Provide the meat that is boiled into the gravy and layered over the rice.
Rice
Forms the bulk of the dish, absorbing the gravy and spices as it cooks.
Ghee
Adds richness and fat, carrying flavour through the layers.
Cinnamon
Contributes warm aroma to the spiced rice.
Saffron
Adds colour and a distinctive floral aroma to the rice.

The step that matters

Cover the saucepan tightly. A tight seal traps steam so the rice cooks through in its own moisture and gravy. If steam escapes, the rice can dry out or cook unevenly.
