What each ingredient does

Vegetable marrows
Provide the main body of the soup, breaking down into pulp that thickens the liquid and gives it flavour.
White stock
Forms the liquid base and softens the marrows so they can be pressed into a smooth purée.
Cream
Adds richness and a silky mouthfeel to the finished soup.

The step that matters

Cook until the marrows are almost mashed. The marrow must be soft enough to break down completely. If it is undercooked, the pulp will not press through the sieve smoothly, leaving the soup grainy rather than silky.
