Baked Carp

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Stuff the cleaned carp with savory force-meat and sew it up.

  2. Brush the fish with beaten egg and sprinkle with bread crumbs.

  3. Drizzle melted butter or ghee over the crumbs.

  4. Place the fish in a deep baking dish.

Bake

  1. Combine stock, sliced onions, sweet herbs, claret, and anchovy sauce; pour over the fish.

  2. Bake for 1 hour at 350°F (175°C).

Make the sauce and serve

  1. Strain the cooking liquid and thicken it with flour rolled in butter, stirring frequently while boiling.

  2. Once thickened, add lime juice, sugar, pepper, and salt to taste.

  3. Serve the fish with the sauce around it or separately in a butter boat.

What each ingredient does

Carp
Forms the main body of the dish, cooked gently in the baking liquid until flaky.
Egg
Binds the bread crumb coating so it adheres to the fish and browns lightly.
Bread crumbs
Form a crisp, golden crust on the outside of the fish.
Butter
Adds richness and helps the crumb coating brown in the oven.
Claret
Adds acidity and depth to the cooking liquid, which becomes the sauce.
Onions
Add sweetness and aroma to the cooking liquid that flavours the sauce.

The step that matters

Thickening the cooking liquid. Flour cooked in butter must boil while stirred constantly, or it stays raw-tasting and lumpy. Adding lime juice only after thickening keeps its bright acidity from thinning or curdling the sauce as it cooks.

Swap the onion

How well each one fits the dish's main ingredients (meat, egg, bread, butter, wine, anchovy, sauce):

  1. Shallotfits better
  2. Tomatofits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against meat, egg, bread, butter, wine, anchovy, sauce. Candidates are from the same food group and used in at least 100 recipes.
