Dressed Crabs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the crabs, then break the claws and remove all the meat, including the roe.

  2. Mince the crab meat and season it with nutmeg, pepper, salt, and wine.

  3. Mix in bread crumbs and butter according to the size of the crab.

  4. Heat the mixture in a saucepan, stirring constantly until thoroughly heated.

  5. Fill the cleaned crab shells with the mixture and seal the edges with puff pastry.

  6. Brown the filled shells in a 400°F (200°C) oven.
