Genoese Sauce for Stewed Fish

Ingredients

Directions

  1. In a stewpan, fry the sliced carrots, onion, parsley roots, mushrooms, bay leaves, thyme, mace, and cloves in butter until the onions are soft.

  2. Add the wine, brown sauce, and consommé to the pan, enough to stew the fish.

  3. Once the fish is cooked, carefully remove it without breaking.

  4. Strain the gravy into a fresh stewpan.

  5. Stir in the anchovy paste and the butter rolled in flour to thicken the sauce.

  6. Squeeze in lime juice and cook over low heat until smooth and thick.

  7. Remove the skin from the fish if large, place it on a dish, and cover it with the sauce.
