Lamb or Kid Pie

Ingredients

Directions

  1. Cut the lamb or kid into slices and season with mushrooms, spices, and sweet herbs.

  2. Optionally, add artichoke bottoms and hard-boiled eggs.

  3. Skin, wash, dry, and flour the meat; fry until light brown in ghee or butter.

  4. Place the fried meat on a sieve before the fire.

  5. In a saucepan, thicken veal gravy with flour and butter over low heat.

  6. Add lemon slice, mushroom ketchup, lemon pickle, nutmeg, and beaten egg yolk mixed with cream.

  7. Stir until hot but do not let it boil to avoid curdling.

  8. Combine the sauce with the fried meat and shake over the fire for 1-2 minutes.

  9. Serve in a very hot dish.
