Kiiubab Liver with Oysters or Cray-fish

Ingredients

Directions

  1. Cut the liver into equal-sized pieces.

  2. Season the liver and oysters with sweet herbs, spices, and coarse sea salt.

  3. Dip the liver and oysters in egg yolks, then roll them in breadcrumbs.

  4. Thread them onto silver skewers and broil in buttered paper or a case.

  5. Serve with buttered gravy and lemon juice, garnished with lemon slices.

  6. If using cray-fish, place a small piece of anchovy in each claw and thread them with the liver.

  7. Roast the liver on a bird-jack, basting well.

  8. Crisp the cray-fish in the oven before skewering.
