Prepare the giblets

  1. Clean the giblets and place them in a saucepan.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Giblets
Provide the main meat, which becomes tender through long, gentle simmering.
Flour
Thickens the sauce as its starch swells in the hot liquid.
Butter
Enriches the thickened sauce and adds smooth, rich body.
Lemon juice
Adds acidity that brightens the rich, savoury sauce.
Mushroom catsup
Adds deep savoury, umami flavour to the sauce.

The step that matters

Skim off the scum after bringing to a boil. Scum is coagulated protein and impurities that rise to the surface; removing it early keeps the broth clear and clean-tasting. Keeping the simmer gentle prevents the giblets from toughening and the broth from clouding.

Swap the onion

How well each one fits the dish's main ingredients (clove, pepper, flour, butter, lemon, mushroom, bread):

  1. Shallotfits better
  2. Spinachfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against clove, pepper, flour, butter, lemon, mushroom, bread. Candidates are from the same food group and used in at least 100 recipes.
