Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Combine ginger, jaggery, and a little water in a bowl.

  2. Add boiled egg whites and mix until smooth.

  3. Cream the butter in another bowl.

  4. Add flour, salt, spices, caraway seeds, and orange peel to the butter.

  5. Mix all ingredients together.

  6. Knead into a paste.

Rest, shape and bake

  1. Let the dough rest for 2 to 3 hours.

  2. Roll out the dough thinly.

  3. Cut into shapes using a glass.

  4. Bake in a preheated oven at 350°F (175°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Jaggery or goor
Provides sweetness and a dark, molasses-like flavour that gives the nuts their colour.
Whites of eggs
Boiled to a treacle-like consistency, they add binding and structure to the dough.
Good butter
Creamed fat that adds richness and tenderness to the crumb.
Plain flour
Forms the main structure of the dough once kneaded into a paste.
Dry ginger
Adds warm, pungent spice aroma that defines the gingerbread flavour.
Preserved orange peel
Adds bright citrus aroma and a chewy, candied bite throughout the dough.

The step that matters

Rolling the dough thinly. Thin dough bakes evenly and crisps through, while thick pieces stay soft in the middle and may not brown properly before the edges over-colour. Because the dough is rich with sugar, it can also darken quickly, so watch it closely in the oven.

Swap the mace

How well each one fits the dish's main ingredients (ginger, egg, butter, cream, flour, clove, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against ginger, egg, butter, cream, flour, clove, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
