Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the nutty flavour and body of the custard once pounded into the liquid.
Cream or milk
Supplies the liquid and richness that the custard sets from.
Egg yolks
Thicken the custard as they gently set when heated, giving it a smooth texture.
Pounded loaf sugar
Sweetens the custard to taste.

The step that matters

Stir over low heat until thickened, but do not let it boil.. Egg yolks set at gentle temperatures, so high heat or boiling can curdle the custard into a grainy, lumpy texture instead of a smooth one.
