  2. For a variation, use water with essence of lemon or boiled lemon peel, and add port or white wine and nutmeg.

What each ingredient does

Arrowroot
Thickens the milk as it heats, giving it a smooth, light body.
Milk
Forms the base of the drink and carries the flavour and body of the dish.
Sugar
Adds sweetness to balance the milk and arrowroot.

The step that matters

Pouring the boiling milk into the arrowroot. Pour the milk gradually while stirring constantly. Arrowroot starch thickens quickly when heated, so adding the milk all at once or without stirring can cause lumps and uneven thickening.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (arrowroot, sugar, milk, white wine, nutmeg):

  1. Vanillafits better
  2. Lemonthe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against arrowroot, sugar, milk, white wine, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
