Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavour of the syrup.
Bitter almonds
Add a sharper, deeper almond aroma to the orgeat.
Clarified sugar or clear syrup
Sweetens the drink and helps keep it stable once boiled.
Orange-flower water
Adds a floral aroma and helps keep the almonds from releasing oil.

The step that matters

Pounding the almonds with orange-flower water. Pounding the almonds very fine with orange-flower water helps prevent the almond oil from separating out. Fine particles also release more flavour into the liquid when rubbed through a cloth or sieve.
