What each ingredient does

Veal breast
Forms the main body of the dish, becoming tender through slow simmering.
Egg yolks
Enriches and thickens the sauce, giving it a smooth, velvety texture.
White wine
Adds acidity and aroma that brighten the rich sauce.
Butter
Adds fat and richness to the base in which the aromatics cook.
Flour
Coats the veal so the sauce thickens and clings to the meat.

The step that matters

Stir in the egg yolks. Egg yolks thicken when heated gently, but if the sauce is too hot they can curdle and turn grainy. Add them off the heat or with the sauce just below a simmer, stirring constantly.

Swap the onion

How well each one fits the dish's main ingredients (veal, butter, carrot, clove, lemon, flour, white wine):

  1. Shallotfits better
  2. Leekfits better
  3. Parsnipfits better
