Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Kalbsleber Gespickte — Calf's Liver Larded

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the liver

  1. Skin the liver and lard it all over with a small larding pin.

  2. Butter a small dish and place the liver inside.

  3. Bake in a 400°F (200°C) oven until browned.

Make the sauce

  1. When the bacon starts to color, dredge it thickly with flour.

  2. In a stew pan, cook the bacon and sliced onion with bay leaf, lemon peel, salt, and pepper until the onion softens.

  3. Add the liver to the stew pan, pour in a little water or broth, and cover to steam until tender, avoiding boiling.

  4. Once done, remove the liver, squeeze lemon juice over it, strain the sauce, and thicken with more flour if needed.

  5. Boil the sauce and pour it over the liver.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the dish and becomes tender when gently steamed.
Bacon
Adds savory fat and flavor that seasons the onion and the sauce.
Onion
Softens into the base of the sauce, adding sweetness and body.
Flour
Thickens the sauce as it cooks with the bacon fat and liquid.
Butter
Adds richness and helps keep the dish from sticking to the dish.

The step that matters

Steam the liver without boiling. Gentle steaming keeps the liver tender. Vigorous boiling toughens its proteins and makes it dry and grainy.

Swap the onion

How well each one fits the dish's main ingredients (liver, lemon, pepper, flour, butter):

  1. Shallotfits better
  2. Spinachfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against liver, lemon, pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
