LammsgescliUiige — Lamb's Pluck

Ingredients

Directions

  1. Soak the lamb's pluck in cold water.

  2. Place it in a pot with enough cold water to cover it, along with onions and soup herbs.

  3. Simmer for about 2 hours, then let it cool in the broth.

  4. Remove the pluck, slice it into ½ inch thick pieces, and dry the meat.

  5. Dip some slices in egg, coat with grated bread, and fry in butter until golden.

  6. Chop the remaining slices smaller and set aside.

  7. Strain the broth, then thicken it with flour and butter.

  8. Add minced shallot or chives, chopped parsley, fine herbs, white pepper, and coarse sea salt to the broth.

  9. Stir in a handful of bread crumbs and simmer until thick and smooth.

  10. Mix the cut-up meat into the sauce, heat thoroughly, and squeeze lemon juice over before serving.

  11. Serve with or without a garnish of bacon rashers.
