Why it works: Turkey and chestnut work together. They rank in the top 10% of all ingredient pairs, and cooks put them together in 136 recipes. Both carry decanal, which smells soap, orange peel. The science ↓
Turkey with Chestnuts
Ingredients
Directions
Prepare
Truss the turkey for roasting.
Peel and scald the chestnuts, then rub off their inner brown skin.
Sprinkle the chestnuts with coarse sea salt and place them with butter inside the turkey.
If the turkey is small, steam the chestnuts in a pan with butter until they begin to soften.
Fill the softened chestnuts into the turkey and sew it up.
Roast and serve
Baste the turkey well while roasting.
Once done, remove the chestnuts with a spoon and serve them with a little white sauce poured over.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chestnuts
- Provide the starchy, soft filling that absorbs flavour and becomes tender during roasting.
- Butter
- Adds fat and richness, carrying flavour into the chestnuts and helping them brown.
- Turkey
- Forms the main roasted centrepiece, with the stuffing cooking inside its cavity.
The step that matters
Softening the chestnuts before filling. Chestnuts that are still firm will not soften fully inside the bird during roasting, so steaming them with butter first helps them become tender. Stuffing them cold also risks uneven cooking inside the turkey.
