Ajyfelsinen Torte — Orange Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Beat the yolks of 8 eggs and the whites of 2 eggs until well combined.

  3. Stir in ¼ pound of powdered sugar, the grated peel, and juice of 3 oranges.

  4. Heat this mixture over low heat with a wire whisk until it thickens, then remove from heat.

  5. Once the cake and cream are partly cooled, whisk the whites of 4 eggs to stiff peaks and fold in 1 tablespoon of sifted sugar.

  6. Spread the thickened cream over the cake.

  7. Peel and divide an orange into half-moons without breaking the skins.

  8. Once the torte is cold, arrange the orange slices in a star shape on top and sift sugar over them.
