What each ingredient does

Pork
Provides fat and flavour, giving the sausage a moist, tender texture.
Veal
Adds a mild flavour and a fine, delicate texture to the filling.
White bread or roll
Soaked in milk and minced in, it holds moisture and keeps the filling tender.
Milk
Softens the bread so it blends into the meat and adds moisture.

The step that matters

Mincing the meat very finely. Fine mincing spreads fat and moisture evenly through the filling, so the sausage stays tender and does not become crumbly or dry when boiled.
