Clear Turtle Soup

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. In a large pot, combine turtle meat and water. Bring to a boil.

  2. Add chopped onions, carrots, celery, bay leaves, salt, and pepper. Simmer for 2 hours.

  3. Strain the broth and return it to the pot.

  4. Whisk egg yolks with lemon juice and temper with hot broth. Stir into the soup.

  5. Serve hot.

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
