Ingredients

Directions

  1. Prepare the vegetable stock by cutting equal quantities of carrots, turnips, onions, leeks, and celery into small pieces.

  2. Toss the vegetables in plenty of butter for 30 minutes.

  3. Add shredded lettuce, parsley, chervil, thyme, marjoram, and tarragon; toss for a few more minutes.

  4. Pour in enough water to make the desired amount of stock, then season with pepper, salt, cloves, mace, and a pinch of sugar.

  5. Let the mixture stew gently for several hours, then strain through a cloth.

  6. For the soup, stir in ½ pint of cream and bring to a boil before serving with fried bread sippets.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (cream, bread, butter, carrot, turnip, leek, celery):

  2. Lettucebetter flavor fit
  3. Chivebetter flavor fit
  4. Onionthe original

Fit is the average pairing score against cream, bread, butter, carrot, turnip, leek, celery. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
