Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Poached eggs are served whole in the tureen as the substantial garnish, firmed by poaching.
Asparagus
Provides the main vegetable flavour and, when boiled tender, the tender heads served in the soup.
Beef or veal broth
Forms the liquid base that carries the flavour of the soup.
Turnips
Add body and savoury sweetness to the base as it simmers until tender.
Onions
Build savoury aroma and depth in the broth as they simmer.

The step that matters

Pour the hot soup over the eggs and asparagus heads. The soup must be hot when poured so the garnish warms through. Poached eggs cooked until hard stay firm, so they hold their shape rather than breaking apart in the hot liquid.

Swap the onion

How well each one fits the dish's main ingredients (beef, turnip, asparagus, egg, tarragon):

  1. Leekfits better
  2. Chivefits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against beef, turnip, asparagus, egg, tarragon. Candidates are from the same food group and used in at least 100 recipes.
