Pork Cutlets

Ingredients

Directions

Grill or fry

  1. Trim the pork chops neatly and broil them on a grill until cooked.

  2. Alternatively, fry the chops in salad oil and serve with Sauce Robert or gherkin sauce mixed with brown gravy.

  3. For marinated cutlets, soak them in oil with sliced onion, parsley, bay leaf, pepper, and salt for 4 hours, then fry in the marinade and serve with tomato sauce.

Make the wine version

  1. To prepare with wine, melt butter in a frying pan, add bay leaves, lemon slices, parsley, thyme, sage, mace, allspice, and white wine.

  2. Add the cutlets, cover, and cook until two-thirds done, then remove, dry, dip in egg, coat with bread crumbs, and fry quickly.

  3. Serve with the sauce from the cutlets, thickened with flour and butter, and stir in a little mustard.

What each ingredient does

Pork chops
Provide the main meat, which cooks through by grilling or frying.
Egg
Binds the bread crumb coating so it adheres to the cutlet during frying.
Bread crumbs
Form a crisp, browned crust when the coated cutlet is fried quickly.
Flour
Thickens the pan sauce so it becomes smooth and cohesive.
White wine
Adds acidity and aroma to the butter sauce the cutlets cook in.

The step that matters

Dry the cutlets before coating and frying quickly. Excess surface moisture keeps the egg and bread crumbs from adhering and steams the coating instead of browning it. Quick frying in hot fat then crisps the crust before the interior overcooks.

Swap the onion
