What each ingredient does

Chicken
Provides the main protein, and its juices flavour the sauce as it simmers.
Butter
Carries the aromatics and adds richness as the onion softens.
Onion
Softens and sweetens as it sweats, forming the flavour base of the sauce.
Flour
Thickens the sauce as it cooks with the curry powder and liquid.
Curry powder
Supplies the spice aroma and colour that define the dish.
Lean ham
Adds savoury, salty depth to the sauce.

The step that matters

Cooking the curry powder and flour. Frying spices and flour in fat for several minutes toasts the spices and cooks out the raw floury taste. Stopping early leaves the sauce dusty and bitter, and stirring or shaking keeps the flour from scorching on the base of the pan.
