Ingredients

Directions

Prepare the gravy

  1. Remove the meat from the fish bones, head, and fins.

  2. Place the bones, head, and fins in a pot with 1 pint of water, onion, herbs, pepper, and salt to stew for gravy.

Form the cake

  1. Mince the fish meat and mix it with some bread crumbs, minced onion, parsley, pepper, salt, and a pinch of mace.

  2. Combine the mixture with egg white and melted butter to form a cake.

  3. Coat the cake with bread crumbs.

Fry and stew

  1. Fry the coated cake until pale brown, keeping a plate on top while frying.

  2. Transfer the cake to a stewpan with the fish gravy and stew gently for 30 minutes, turning it carefully to avoid breaking. Cover the stewpan while cooking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat from fish
Forms the main body of the cake and gives it its savoury flavour.
Egg white
Binds the minced fish so the cake holds its shape.
Bread crumbs
Absorb moisture and add body to the cake, and coat it for browning.
Melted butter
Adds fat for richness and helps the cake brown when fried.
Bones, head, and fins of fish
Release flavour and body into the stewed gravy.

The step that matters

Turning the cake in the gravy. The cake is soft and held together only by egg white and crumbs, so it can break apart when moved. Turning it gently and keeping it covered while it stews helps it hold its shape and cook evenly.

Swap the mace

How well each one fits the dish's main ingredients (meat, fish, onion, pepper, bread, parsley, egg):

  1. Thymefits better
  2. Capersfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against meat, fish, onion, pepper, bread, parsley, egg. Candidates are from the same food group and used in at least 100 recipes.
