What each ingredient does

Almonds
Fried and pounded into a cream, they thicken the sauce and add a nutty flavour.
Chicken
Forms the main body of the dish, cooked slowly in the sauce until tender.
Cream
Added near the end to enrich the sauce and mellow its richness.
Lemon juice
Added just before serving to brighten the sauce with acidity.
Turmeric
Gives the sauce its yellow colour and an earthy, warm flavour.

The step that matters

Frying the almonds. Almonds go from golden to bitter within moments of darkening. Frying them gently until just brown and watching closely prevents burnt, bitter notes that would carry through the whole sauce.
