Cold Macaroni

Ingredients

Directions

  1. Boil the macaroni in weak veal-broth until soft, adding salt for seasoning.

  2. Drain the macaroni and place it on a dish, layering with small bits of butter and grated Parmesan cheese.

  3. Top with more grated cheese and butter, then place the dish in a Dutch oven for 1 hour without allowing the cheese to harden.

  4. If already dressed, warm in broth, simmer gently, and add 2 egg yolks to thicken before placing in the oven covered with bread crumbs.
