Codfish Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Spread a little cold oyster sauce at the bottom of a pie dish.

  3. Layer flakes of dressed codfish and small pieces of liver, seasoning each layer with black pepper, coarse sea salt, and a pinch of nutmeg.

  4. Repeat the layers until the dish is full.

  5. Top with bread crumbs and bits of fresh butter.

  6. Bake for 30 minutes or until the top is browned.

  7. If using sounds, soak, boil until tender, and cut into small pieces to add for extra flavor.
