What each ingredient does

Haddocks
Forms the main body of the pudding and gives it its flesh and flavour.
Eggs
Bind the mixture and set it firm as it cooks.
Veal suet
Adds fat, keeping the pudding moist and tender during cooking.
Bread crumbs
Absorb moisture and help give the pudding a lighter, softer body.

The step that matters

Beating the mixture until well combined. Thorough beating spreads the eggs, suet and crumbs evenly through the fish, so the pudding sets uniformly rather than in patches or crumbling when turned out.

Swap the onion

How well each one fits the dish's main ingredients (haddock, egg, parsley, pepper, bread, veal):

  1. Carrotfits better
  2. Capsicumfits better
  3. Shallotfits better
