Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks and whites set the pudding into a firm, custard-like texture when heated.
Milk
Provides the liquid base that the chocolate and eggs are combined into.
Chocolate
Adds flavour and colour to the pudding base.
Loaf sugar
Sweetens the pudding and the vanilla sauce.
Arrowroot
Thickens the vanilla sauce.

The step that matters

Steam the pudding gently. Egg-based puddings turn grainy or spongy if overheated, because the egg proteins set too tightly and squeeze out liquid. Steady, moderate heat keeps the texture smooth.

Swap the arrowroot

How well each one fits the dish's main ingredients (milk, chocolate, sugar, egg, vanilla, sauce):

  1. Capsicumfits about as well
  2. Arrowrootthe original
  3. Sweet potatofits about as well
  4. Potatofits less well

Fit is the average pairing score against milk, chocolate, sugar, egg, vanilla, sauce. Candidates are from the same food group and used in at least 100 recipes.
