Almond Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the almond paste

  1. Scald and peel the sweet and bitter almonds, then pound them in a mortar to a fine smooth paste.

Make the batter

  1. Cream together the butter and powdered sugar until smooth.

  2. Gradually add the mixed wine and brandy to the butter and sugar mixture.

  3. Beat the egg whites to a stiff froth and fold them into the mixture along with the pounded almonds.

Bake and serve

  1. Pour the mixture into a buttered dish and lay puff pastry around the edge.

  2. Bake at 350°F (175°C) for 1 hour, then grate sugar over the top before serving.

What each ingredient does

Egg whites
Beaten to a stiff froth, they lighten the pudding and help it rise and set.
Butter
Creamed with sugar, it adds richness and a tender, moist texture.
Powdered white sugar
Creamed with butter, it sweetens the pudding and helps give a smooth texture.
Sweet almonds
Pounded into a paste, they provide the main nutty flavour and body of the pudding.

The step that matters

Folding in the beaten egg whites. Stiffly beaten whites hold air that gives lift. Folding gently keeps that air in; stirring hard deflates the batter and leaves a dense pudding.
