Preserved Cucumbers

Ingredients

Directions

  1. Place cucumbers in a mixture of salt and water, topped with vine leaves, and set by the fireside until they turn yellow.

  2. Wash the cucumbers and place them in a pot with alum and water, covered with vine leaves.

  3. Boil until they turn green, then remove from heat and let them cool in the liquid.

  4. Quarter the cucumbers, removing the soft parts and seeds, and soak in cold spring water, changing the water twice daily for three days.

  5. Prepare a syrup by combining 1 pound of loaf sugar with enough water to moisten it and ½ ounce of powdered ginger; boil and skim until free of scum.

  6. Once boiling, add the juice and rind of a lemon, then let the syrup cool.

  7. Pour the cooled syrup over the prepared cucumbers.
