Ingredients

Directions

Prepare the turtle

  1. Select the thickest pieces of dried turtle.

  2. Boil the turtle in water for 6 hours or soak it in cold water for 3 days, changing the water daily.

Make the soup

  1. Stew the turtle in 2 quarts of mixed consomme until quite soft, which will take several hours.

What each ingredient does

Dried turtle
Provides the main meat, which must be softened slowly to become tender.
Consomme
Forms the rich broth that the turtle simmers in and carries the flavour of the soup.
Sherry
Adds aromatic sweetness and acidity that brightens the finished soup.

The step that matters

Stewing the turtle until quite soft. Dried turtle is tough and needs long, gentle simmering so its connective tissue breaks down. Rushing this leaves the meat chewy, and boiling hard can toughen it further.

Swap the lemon

How well each one fits the dish's main ingredients (sherry, pepper):

  1. Plumfits about as well
  2. Pineapplefits about as well
  3. Lemonthe original
  4. Limefits about as well

Fit is the average pairing score against sherry, pepper. Candidates are from the same food group and used in at least 100 recipes.
