What each ingredient does

Mutton
Supplies the meat and rich flavour that give the broth its body and savour.
Pearl barley
Releases starch as it simmers, thickening the broth and adding a soft, body-giving texture.
Carrots
Add sweetness and aroma as they cook into the broth.
Onions
Add savoury depth and aroma to the broth as they soften during simmering.
