What each ingredient does

Beef or veal
Forms a meaty lining that holds the filling and adds savoury flavour as it cooks.
Larks, fieldfares, or sparrows
Provides the main meat of the pie, cooking to tender, flavourful meat in the filling.
Mushrooms
Release moisture and earthy flavour that enrich the filling as it bakes.
Hard-boiled eggs
Add richness and a soft, creamy texture that contrasts with the meat.
Consommé
Supplies liquid that moistens the birds and carries flavour through the pie.
