What each ingredient does

Loaf sugar
Dissolves into the hot water to sweeten the lemon juice and balance its acidity.
Lemon juice
Provides the sharp acidity and bright flavour that defines the punch.
Lemon rind
Adds aromatic lemon oils to the base as it steeps in the sweet liquid.
Jamaica rum
Adds spirit flavour and, because alcohol does not freeze solid, keeps the punch softer when frozen.

The step that matters

Adding the rum at half frozen. Alcohol lowers the freezing point, so rum added to a fully frozen mixture will not blend in evenly. Adding it when the mixture is about half frozen lets it mix through the slush and keeps the texture smooth and scoopable.
