Ingredients

Directions

  1. Scrape and clean the asparagus, cutting the stalks into even lengths.

  2. Tie the stalks into bundles that fit your bottles.

  3. Boil salted water and cook the bundles for 5 minutes.

  4. Rinse the bundles in cold water and dry on a clean cloth.

  5. Place the bundles into the bottles.

  6. Boil more salted water and fill the jars to the top.

  7. Fit on the glass tops and place the bottles in a kettle of water, swathed in hay.

  8. Bring the water to a boil and cook for 1.5 hours.

  9. Cork and wax the bottles, then let them cool in the cooking water without moving.

  10. Store the bottles in a warm corner, label with the date of bottling.
