Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Beat the yolks of the eggs with the caster sugar until light.

  2. Stir in the whipped egg whites until stiff.

  3. Whisk the mixture over boiling water until warm, then remove from heat and whisk until cold.

  4. Sift in the flour and mix gently.

  5. Pour the mixture into a paper-lined mold and bake at 350°F (175°C) until ready.

  6. Remove from the oven, take off the paper, and let it cool.
