Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. Prepare a piping bag with a plain tip.

  3. Pipe the mixture onto a buttered baking sheet in finger shapes.

  4. Brush each finger with beaten egg yolk mixed with a little water.

  5. Let them stand for 15 minutes.

  6. Bake until nicely colored.

  7. Dust with caster sugar and return to the oven until glazed.

  8. Cool on a pastry rack or sieve.

  9. Once cool, slit them down the side and fill with cream, custard, or other fillings.

  10. Serve plain or with icing.
