What each ingredient does

Fowl
Gives the broth its main meaty flavor and body as it simmers.
Cold water
Slowly draws flavor and gelatin out of the fowl into the liquid.
Onion
Adds savory sweetness and aroma to the broth.
Carrot
Adds gentle sweetness and depth to the broth.

The step that matters

Skim the scum as it rises. Starting in cold water and simmering gently lets proteins and fat rise to the surface as scum. Removing it keeps the consommé clear and clean-tasting. Boiling hard would mix these impurities back in and make the broth cloudy.
