Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Ox-tail Soup
Ingredients
Directions
Cut the oxtails at the joints into 2-inch pieces.
Slice the vegetables and mince the pork.
In a stewpan, heat the pork until hot, then add the onion.
Fry until the onion begins to color, then add the oxtails.
Fry the oxtails for 5 to 8 minutes, browning on all sides.
Cut each joint to the bone to allow the juice to escape while boiling.
Transfer everything to a soup kettle and add the boiling water.
Simmer gently for about 4 hours.
Add the other vegetables and cloves stuck into a piece of onion.
Season to taste.
Once the vegetables are cooked, strain the soup through a fine strainer.
Serve 1 joint and 2 cups of soup for each person.
