Chicken Souffle

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the base

  1. Boil the white sauce until it forms a thick paste.

  2. Finely chop the chicken and rub it through a sieve or pound it in a mortar before sieving.

  3. Mix the chicken with the sauce and season with salt and pepper.

  4. Beat in the egg yolks.

Bake and serve

  1. Grease a baking dish or several small souffle dishes with butter.

  2. Just before baking, gently fold the beaten egg whites into the mixture.

  3. Fill the dish and bake in a very hot oven at 400°F (200°C) for 8 to 12 minutes.

  4. Serve immediately, as it spoils if left to stand.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten and folded in, they trap air to lift the souffle as it bakes.
Egg yolks
Enrich the base and add richness and structure as they set with heat.
White sauce
Thickened base that holds the chicken and gives the souffle body.
Cold chicken
Main protein, finely minced so it blends smoothly into the base.

The step that matters

Folding in the egg whites. Folding gently keeps the air beaten into the whites. Stirring or deflating the mixture makes the souffle heavy and flat, so it should go into the oven soon after folding.
